By removing the tiles with bees on the mahjong levels, you collect bee honey and compete against other players. If you fail to collect a bee tile in 5 moves, it will disappear.
You can earn different amounts of honey for completing normal and challenging levels. You'll get double the reward for completing levels on your first attempt.
